Pan-fried Celtic Pride Beef Medallions
Pan-fried Celtic Pride Beef Medallions glazed with Llanboidy cheese, sesame red cabbage and apple, Horseradish mash, brains beer jus

Ingredients
- 4 x 200g - Sirloin Medallions of Celtic Pride Beef sirloin
- 150g - Snowdonia red devil cheese
- 250g - Potatoes
- 1 Bramley apple
- 200g - Red Cabbage
- 25g - Sesame seeds
- 100ml - Apple juice
- 25g - Honey
- 200ml - Beef stock
- 100ml - Brains beer
- 1 sprig of thyme
- 25g - Grated horseradish
Method
- Pan fry the four medallions of beef then place the red devil cheese on top and cook in a hot
oven until glazed.
- Boil the potatoes and mash add the horseradish and cream together.
- Finally slice the red cabbage place into a pan with the apple juice, honey diced apple and the
sesame seeds simmer slowly until soft.
- Reduce the Brains beer, beef stock and sprig of thyme until sauce consistency
To serve
Pipe the horseradish mash into the centre of the plate. Arrange the red cabbage Place the beef fillet on top and arrange the sauce around. Garnish with a sprig of thyme
