TRADITIONAL WELSH CAWL
Ingredients
1 neck fillet of lamb from the shoulder
1lb shin beef
1 small Swede diced
200g carrots diced
250g potatoes diced
2 large leeks diced
2 bay leaves
Parsley
Salt and black pepper
Method
1. Put the beef into a large pan, cover with cold water, bring slowly to the boil, add seasoning and skim. Simmer gently for 1 hour.
2. Add the lamb neck fillet, carrots, Swedes leeks; potatoes, salt and pepper, bay leaf. Simmer gently for 2 hours.
3. After simmering for 2 hours chop the parsley add to the cawl.
To Serve
Place a small amount of the cawl into a large bowl then remove the lamb and the beef, carve a piece of each and place into the bowl then cover with the cawl and serve a cheese crouton if you wish.
